Did the beet greens get removed before arriving? Those are good in salads, IMO.

I third or fourth or whatever the suggestion to roast the beets -- we like roasting them in a bit of olive oil and rosemary, cut in thin slices. :) You can also make a good carrot-ginger-beet soup.
